Brewing Steps
-
0:00
Bloom
Pour 60g of water slowly over the coffee grounds in a spiral motion.
Aim for a 30-second pour; then wait for 30 seconds to let the coffee bloom.
-
1:00
Percolation
At 1:00, pour 100g of water in a spiral motion, aiming for a 40-second pour. This can be a bit faster if you want to increase the agitation. Selectively pour on darker, drier spots to ensure even saturation.
-
2:00
Close the switch
At 2:00, close the switch to start the immersion phase.
-
2:00
Immersion
Add the remaining water (160g) and let it steep until 3:00. Open the switch to drain the coffee.
The coffee should finish draining before 4:00.
-
4:00
Serve
Swirl, smell, slurp, and enjoy your coffee!
Tweakables
Adjust these parameters to fine-tune your brew.
-
For heavier body: bloom with a closed switch, or increase steep time or both
-
For fermented beans: do not close the switch
-
For more acidity: increase volume/agitation of percolation pour
-
For developed/omni roasts: lower temp in bloom or in immersion and see the effect for your coffee
-
For more sweetness: less volume/agitation of percolation pour
-
For tough beans: make it only 1 long percolation pour (cancel immersion)
